If you just want a quick proxy to inspect traffic, apache with mod_dumpio¹ always seemed the quickest and easiest way to do it: just proxypass your traffic and

     LogLevel dumpio:trace7
     DumpIOInput On
     DumpIOOutput On

and all your traffic is in the log files.
